Ingredients

2 cups cottage cheese (low-fat)

1/4 cup unsweetened cocoa powder

1/4 cup maple syrup (or honey)

1/4 cup almond milk (or any milk of choice)

1 tsp vanilla extract

Pinch of sea salt

Optional toppings: chopped nuts, chocolate chips, or fresh berries

Instructions

Blend the Base: In a high-speed blender or food processor, combine the cottage cheese, unsweetened cocoa powder, maple syrup, almond milk, vanilla extract, and sea salt. Blend until smooth and creamy, ensuring that there are no lumps.

Taste and Adjust: Taste the mixture and adjust sweetness by adding more maple syrup if desired. Blend again if you add any ingredients.

Chill: Transfer the mixture to a bowl, cover it, and refrigerate for at least 1 hour to chill.

Churn the Ice Cream: Once chilled, pour the mixture into an ice cream maker. Churn according to the manufacturer’s instructions until it reaches a soft-serve consistency (about 20-25 minutes). If you don't have an ice cream maker, you can skip this step and pour the mixture directly into a freezer-safe container.

Freeze: If using an ice cream maker, transfer the churned ice cream to a freezer-safe container, smoothing the top with a spatula. Cover tightly and freeze for at least 2-3 hours or until firm. If pouring directly into the container, freeze for 4-6 hours, stirring every 1-2 hours to break up ice crystals.

Serve: Scoop the ice cream into bowls and top with optional toppings like chopped nuts, chocolate chips, or fresh berries. Enjoy the guilt-free treat!
