4 cups of diced potatoes (about 4 medium-sized potatoes)

2 cups of diced ham (smoked or honey-baked for extra flavor)

1 cup of shredded sharp cheddar cheese

1 cup of shredded mozzarella cheese

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup of heavy cream

1 cup of chicken broth

1 teaspoon of paprika

1 teaspoon of dried thyme

Salt and pepper to taste

1 tablespoon of olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes: Peel and dice the potatoes into small cubes. Place them in a pot of salted water and bring to a boil. Cook for about 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent, about 3-4 minutes.

        Combine Ingredients: In a large mixing bowl, combine the partially cooked potatoes, diced ham, sautéed onion and garlic, heavy cream, chicken broth, paprika, thyme, salt, and pepper. Mix well to combine.

          Layer the Casserole: In a greased 9x13-inch baking dish, layer half of the potato and ham mixture on the bottom. Sprinkle half of the cheddar and mozzarella cheese on top. Then, add the remaining potato mixture and top it with the rest of the cheese.

            Bake: Cover the baking dish with aluminum foil (to keep the moisture in) and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 20-25 minutes or until the cheese is bubbly and golden brown.

              Cool and Serve: Once baked, remove the casserole from the oven and let it cool for about 5-10 minutes. Garnish with freshly chopped parsley before serving.
