1 lb ground beef

1 medium onion, diced

1 bell pepper, diced (any color)

2 cups frozen hash brown potatoes, thawed

2 cups shredded cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon paprika (optional, for color)

1/4 cup green onions, sliced (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, brown the ground beef. Break it apart with a spatula as it cooks. Once it’s halfway cooked, add the diced onion and bell pepper. Cook until the beef is fully browned and the vegetables are soft, about 5-7 minutes. Drain any excess grease.

      Mix the Casserole Base: In a large mixing bowl, combine the cream of mushroom soup, milk, garlic powder, onion powder, salt, black pepper, and paprika. Whisk until fully combined.

        Combine Ingredients: Stir the thawed hash browns into the beef mixture, followed by the soup mixture. Mix together until everything is well incorporated.

          Add Cheese: Gently fold in 1.5 cups of the shredded cheddar cheese until evenly distributed throughout the mixture.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

              Top with Cheese: Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the casserole.
