2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cut into cubes

1 cup buttermilk

1 cup cooked breakfast sausage, crumbled

1 cup shredded sharp cheddar cheese

1 cup diced Hatch green chiles (fresh or roasted)

1 teaspoon garlic powder

1 teaspoon onion powder

1 egg (for egg wash)

Optional: additional cheese for topping

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Dough: In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk until well mixed. Add the cold butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.

      Mix in Wet Ingredients: Pour in the buttermilk and stir just until combined. The dough should be slightly sticky but manageable. Do not overmix.

        Fold in Fillings: Gently fold in the crumbled breakfast sausage, shredded cheddar cheese, diced Hatch green chiles, garlic powder, and onion powder. Make sure the filling is evenly distributed throughout the dough.

          Shape the Bombs: On a floured surface, turn out the dough and gently pat it into a rectangle about 1 inch thick. Cut it into squares (approximately 3x3 inches).

            Fill the Dough Squares: Place a generous spoonful of the filling mixture in the center of each square. Fold the corners of the dough over the filling to create a tight ball, pinching the edges to seal.

              Prepare for Baking: Place the filled biscuit bombs seam-side down on the prepared baking sheet. Brush the tops with the beaten egg for a golden finish. If desired, sprinkle additional cheese on top for extra flavor.

                Bake: Bake in the preheated oven for 15-18 minutes, or until the tops are golden brown and the biscuits are cooked through.

                  Cool and Serve: Allow the biscuit bombs to cool for a few minutes before serving. They are best enjoyed warm, with a side of salsa or your favorite dipping sauce.
