Ingredients

2 large flatbreads (store-bought or homemade)

2 cups cooked shredded chicken (rotisserie chicken works well)

1 cup Hatch green chilies, roasted and chopped (adjust to taste)

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: sliced avocado and lime wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken, chopped Hatch green chilies, garlic powder, smoked paprika, salt, and pepper. Mix well to ensure the flavors are evenly distributed.

Assemble the Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Drizzle a little olive oil over each flatbread and spread it evenly.

Top the Flatbreads: Divide the chicken mixture evenly between the two flatbreads, spreading it out so that it covers them generously.

Add Cheese: Sprinkle the Monterey Jack cheese and sharp cheddar cheese over the chicken mixture, ensuring an even layer. This will create a delicious, gooey topping once baked.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cheese is bubbly and golden brown.

Prepare the Garnish: While the flatbreads are baking, mix the chopped cilantro into the sour cream for a fresh condiment.

Slice and Serve: Once the flatbreads are done, remove them from the oven and let cool for a minute. Slice into quarters and serve warm with the cilantro sour cream on the side. Optional: Add sliced avocado on top for an extra touch of creaminess, and serve with lime wedges for a zesty kick.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4 quarters per flatbread (total of 8 servings)
