1 cup ricotta cheese

1 cup shredded Monterey Jack cheese

1 teaspoon onion powder

Salt and pepper to taste

For the Pasta Rolls:

12 lasagna noodles

2 cups marinara sauce (store-bought or homemade)

1/2 cup fresh cilantro, chopped

1 teaspoon olive oil (for drizzling)

1/2 teaspoon smoked paprika (optional, for garnish)

For the Topping:

1 cup shredded mozzarella cheese

Additional diced Hatch green chiles for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a parchment-lined baking sheet to cool.

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, diced Hatch green chiles, ricotta cheese, Monterey Jack cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well until fully incorporated. Set aside.

      Assemble the Rolls: Preheat your oven to 375°F (190°C). Take one lasagna noodle and place 2 to 3 tablespoons of the filling mixture at one end. Carefully roll the noodle up from the filled end to the unfilled end, creating a tight roll. Repeat with the remaining noodles and filling.

        Prepare for Baking: In a 9x13-inch baking dish, spread 1 cup of marinara sauce on the bottom. Place the pasta rolls seam side down in the dish. Pour the remaining marinara sauce over the tops of the rolls, ensuring they are well coated.
