2 cups cooked shredded chicken

1 cup Hatch green chilies, diced (fresh or canned)

1 cup cream cheese, softened

1 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

½ teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

10 small flour tortillas

Oil (for frying or brushing)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, diced Hatch green chilies, softened cream cheese, Monterey Jack cheese, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated and creamy.

    Assemble the Taquitos: Lay a flour tortilla flat on a clean surface. Spoon about 2-3 tablespoons of the chicken and chili filling along one side of the tortilla. Carefully roll the tortilla tightly around the filling, starting from the filled side. Repeat this process until all filling is used.

      Heat the Oil: In a large frying pan, heat about 1 inch of oil over medium heat (or preheat your air fryer according to the manufacturer's instructions if you prefer a healthier option).

        Fry the Taquitos: Once the oil is hot, carefully place the rolled taquitos seam-side down into the pan. Fry them for 2-3 minutes on each side, or until golden brown and crispy. If air frying, lightly brush the taquitos with oil and air fry at 375°F (190°C) for about 12-15 minutes, flipping halfway through.

          Drain and Cool: Remove the taquitos from the oil and place them on a plate lined with paper towels to drain excess oil. Allow them to cool for a few minutes.

            Serve: Once cooled slightly, serve the taquito rolls with chopped cilantro on top, alongside sour cream and salsa for dipping.
