Ingredients

For the Cake:

2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup vegetable oil

4 large eggs

2 cups grated carrots (about 3-4 medium carrots)

1 cup crushed pineapple, drained

1 cup chopped walnuts or pecans (optional)

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

2 teaspoons vanilla extract

1 tablespoon milk (optional, for consistency)

Instructions

Prepare the Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk well to combine.

Combine Wet Ingredients: In a separate bowl, whisk together the vegetable oil and eggs until well blended. Stir in the grated carrots, crushed pineapple, and vanilla extract.

Combine Everything: Gradually add the wet mixture to the dry ingredients, stirring just until combined. Be careful not to overmix. If using, fold in the chopped walnuts or pecans.

Bake the Cake: Divide the batter evenly between the two prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes: Once done, remove the cakes from the oven and allow them to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Make the Frosting: In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar, mixing until fluffy. Stir in the vanilla extract and, if desired, a tablespoon of milk for a smoother consistency.

Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer of cake on top and frost the top and sides of the cake as desired.

Garnish (Optional): For an extra tropical touch, you can top the cake with a sprinkle of toasted coconut flakes or some additional chopped nuts.

Serve and Enjoy: Slice into the delicious Hawaiian Carrot Pineapple Cake, serve, and enjoy your sweet escape to paradise!
