Ingredients

2 cups rolled oats

1 cup almond butter (smooth or crunchy)

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1 cup almonds, roughly chopped

1/2 cup unsweetened shredded coconut

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries or raisins (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

Mix Wet Ingredients: In a large mixing bowl, combine the almond butter, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Stir until the mixture is smooth and well-combined.

Combine Dry Ingredients: In another bowl, mix together the rolled oats, chopped almonds, shredded coconut, and cinnamon. Make sure they are evenly distributed.

Combine All Ingredients: Pour the dry ingredients into the wet ingredients bowl. Stir thoroughly until all the oats and nuts are coated in the almond butter mixture.

Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet. Spread it out evenly into an even layer, pressing down slightly to help it clump together.

Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, stirring halfway through to ensure even browning. Bake until golden brown and fragrant.

Add Dried Fruit: Once out of the oven, let the granola cool completely on the baking sheet. Once cooled, add the dried cranberries or raisins if using, stirring to combine.

Store: Transfer the cooled granola into an airtight container. It can be stored at room temperature for up to 2 weeks.

Feel free to adjust the nuts or dried fruits based on your preferences. Enjoy your healthy, homemade almond butter granola!
