Ingredients

1 cup rolled oats (blended into flour)

1/2 cup almond flour

1/2 cup vanilla protein powder

1/4 cup coconut sugar (or maple syrup for a vegan option)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

2 large eggs (or flax eggs for a vegan option)

1/2 cup unsweetened applesauce

1/4 cup almond milk (or your choice of milk)

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with baking cups or grease it lightly.

Prepare the Dry Ingredients: In a large bowl, combine the blended oat flour, almond flour, protein powder, coconut sugar, baking powder, baking soda, cinnamon, and salt. Whisk until well combined.

Mix the Wet Ingredients: In a separate bowl, beat the eggs (or flax eggs), then add the applesauce, almond milk, and vanilla extract. Stir until the mixture is smooth.

Combine Wet and Dry Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined; be careful not to overmix.

Fold in the Blueberries: Gently fold in the blueberries into the muffin batter, ensuring they are evenly distributed.

Fill the Muffin Tin: Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or store in an airtight container for later!
