4 whole wheat tortillas

1 cup shredded cheddar cheese (or a mix of mozzarella and cheddar)

1/2 cup black beans, rinsed and drained

1 cup spinach, chopped (fresh or frozen)

1 small bell pepper, diced (any color)

1/2 cup corn (canned, frozen, or fresh)

1 tsp cumin

1 tsp garlic powder

Salt and pepper to taste

Olive oil or non-stick cooking spray, for cooking

Salsa or Greek yogurt, for dipping (optional)

Instructions
 

Prep the Veggies: Begin by washing and chopping the bell pepper and spinach if using fresh. If using frozen spinach, thaw and drain excess water.

    Mix the Filling: In a mixing bowl, combine the black beans, corn, bell pepper, spinach, cumin, garlic powder, salt, and pepper. Stir well to mix all the ingredients evenly.

      Heat the Pan: Place a skillet over medium heat and lightly grease it with olive oil or non-stick cooking spray.

        Assemble the Quesadilla: Place one tortilla in the skillet. On one half of the tortilla, sprinkle a layer of shredded cheese, then add a generous amount of the veggie and bean mixture on top. Fold the other half of the tortilla over to cover the filling.

          Cook to Perfection: Cook the quesadilla for about 2-3 minutes on one side or until golden brown and crispy. Carefully flip it over using a spatula and cook the other side for another 2-3 minutes, adding more oil if necessary.
