Healthy Ground Turkey Sweet Potato Bake

1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, finely chopped

2 garlic cloves, minced

1 cup spinach, chopped (fresh or frozen)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 cup low-sodium chicken broth

1 tablespoon olive oil

1/2 cup shredded cheddar cheese (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: In a pot of salted boiling water, cook the diced sweet potatoes for about 10 minutes or until tender. Drain and set aside.

      Cook the Turkey: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onions become translucent.

        Brown the Turkey: Add the ground turkey to the skillet. Season with cumin, smoked paprika, thyme, salt, and pepper. Cook for about 5-7 minutes, breaking it apart with a spatula, until it's browned and cooked through.

          Add Spinach and Sweet Potatoes: Stir in the chopped spinach and cooked sweet potatoes. Mix well to combine all the ingredients.

            Add Chicken Broth: Pour the chicken broth over the turkey and sweet potato mixture, stirring gently. Allow it to cook for another 2-3 minutes until the spinach is wilted.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly. If you like, sprinkle the shredded cheddar cheese on top.

                Bake the Dish: Place the baking dish into the preheated oven and bake for 20 minutes or until the top is bubbly and slightly golden.

                  Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
