Ingredients

1 cup natural peanut butter (or almond butter)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups old-fashioned rolled oats

1/2 cup unsweetened cocoa powder

1/4 cup ground flaxseed (optional)

1/4 teaspoon sea salt

1/2 cup dark chocolate chips or chunks (optional)

1/4 cup chopped nuts (walnuts, almonds, or pecans) (optional)

Instructions

Prepare the Base: In a medium saucepan over low heat, combine the peanut butter and honey (or maple syrup). Stir continuously until melted and combined, about 2-3 minutes. Remove from heat and stir in the vanilla extract.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cocoa powder, ground flaxseed (if using), and sea salt. Mix until everything is evenly distributed.

Combine Ingredients: Pour the melted peanut butter mixture into the bowl with the dry ingredients. Use a spatula or wooden spoon to mix everything together until all the oats are evenly coated.

Add Extra Goodness: If you’re using dark chocolate chips or chopped nuts, fold them into the mixture now until they are evenly incorporated.

Shape the Cookies: Line a baking sheet with parchment paper. Use a tablespoon or cookie scoop to scoop out portions of the mixture and drop them onto the prepared sheet. Flatten them slightly with the back of the spoon to form cookie shapes.

Chill and Set: Place the baking sheet in the refrigerator for at least 30 minutes to allow the cookies to firm up.

Serve and Enjoy: Once set, enjoy your healthy no-bake cookies! They can be stored in an airtight container in the refrigerator for up to a week.

Prep Time: 10 minutes | Total Time: 40 minutes | Servings: Approximately 12-15 cookies
