2 cups rolled oats

1 ripe banana, mashed

1/2 cup almond butter (or any nut butter of your choice)

1/3 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/2 tsp vanilla extract

1 tsp cinnamon

1/2 tsp baking powder

1/4 tsp salt

1/3 cup chopped nuts (walnuts, almonds, or pecans)

1/4 cup dried fruit (raisins, cranberries, or dates)

Optional: 1/4 cup dark chocolate chips

Instructions
 

Preheat Your Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed banana, almond butter, honey (or maple syrup), applesauce, and vanilla extract. Stir until smooth and evenly mixed.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, cinnamon, baking powder, and salt.

        Combine Mixtures: Pour the dry ingredients into the wet ingredients bowl. Stir until just combined. Fold in the chopped nuts, dried fruit, and dark chocolate chips if using.

          Transfer to Baking Dish: Spread the mixture evenly in the prepared baking dish, pressing it down firmly to create an even layer.

            Bake: Bake in the preheated oven for 25-30 minutes, or until the edges start to turn golden brown.

              Cool and Slice: Once baked, remove the dish from the oven and let it cool in the pan for about 10-15 minutes. Using the parchment overhang, lift the bars out and transfer them to a cutting board. Allow to cool completely before slicing into bars.

                Store: Store the oatmeal bars in an airtight container at room temperature for up to a week, or in the fridge for longer freshness.
