Ingredients

2 cups rolled oats

1/2 cup almond flour

1/2 cup honey or maple syrup

1/3 cup almond butter (or any nut butter of choice)

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup mixed nuts (walnuts, almonds, pecans), chopped

1/2 cup dried fruit (raisins, cranberries, or apricots), chopped

Optional: 1/4 cup dark chocolate chips

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, cinnamon, and salt. Stir well to combine.

Combine Wet Ingredients: In a separate bowl, mix together the honey (or maple syrup), almond butter, applesauce, and vanilla extract until smooth and well blended.

Combine Mixtures: Pour the wet mixture into the dry ingredients and mix until just combined. Fold in the chopped nuts and dried fruit, and if desired, the dark chocolate chips.

Press the Mixture: Transfer the mixture to the prepared baking pan. Use a spatula or your hands to press the mixture firmly and evenly into the pan.

Bake: Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and the center is set.

Cool and Slice: Remove from the oven and let the bars cool in the pan for 10-15 minutes. Then, lift the bars out using the parchment paper and place them on a wire rack to cool completely before slicing into bars.

Store: Store the bars in an airtight container at room temperature for up to 1 week, or refrigerate for longer freshness.
