Heart Jam Cookies

2 cups all-purpose flour

1/2 cup powdered sugar

1/2 tsp baking powder

1/4 tsp salt

1 cup unsalted butter, softened

1 tsp vanilla extract

1/4 cup raspberry or strawberry jam (or your favorite flavor)

1 egg yolk, for egg wash

Extra powdered sugar, for dusting

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, powdered sugar, baking powder, and salt until combined. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and remaining powdered sugar using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

        Add Vanilla and Combine: Mix in the vanilla extract, and gradually add the dry ingredients. Beat until just combined, being careful not to overwork the dough.

          Chill the Dough: Divide the dough into two equal portions. Wrap each portion in plastic wrap and refrigerate for about 30 minutes to firm it up for easier rolling.

            Roll Out Dough: Once chilled, take one portion of the dough out of the fridge. On a lightly floured surface, roll out the dough to about 1/4 inch thick.

              Cut Shapes: Using a heart-shaped cookie cutter, cut out shapes and transfer them to the prepared baking sheet. Using a smaller heart-shaped cutter, cut a heart shape out of the center of half of the cookies (these will be the top cookies).

                Fill with Jam: Place about 1/2 teaspoon of jam in the center of each whole cookie (the ones without heart cutouts).

                  Assemble the Cookies: Place the heart-cutout cookies on top of the jam-filled cookies, gently pressing down to seal them together.

                    Egg Wash: Beat the egg yolk with a splash of water, and brush it over the tops of the heart-shaped cookies for a nice golden finish.

                      Bake: Bake in the preheated oven for about 12-15 minutes, or until the edges are lightly golden.

                        Cool and Dust: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Once cool, dust the tops with extra powdered sugar.
