1 lb (450 g) beef chuck, cut into 1-inch cubes

1 cup pearl barley, rinsed

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

4 cups beef broth

2 cups water

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed beef and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the onions have softened. Stir in the minced garlic and cook for an additional minute.

      Combine Ingredients: Return the browned beef to the pot. Add the rinsed pearl barley, beef broth, water, diced tomatoes (with juices), thyme, rosemary, and bay leaves. Stir to combine.

        Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked. Stir occasionally and adjust seasoning with more salt and pepper if needed.

          Finish and Garnish: Once cooked, remove the bay leaves. Ladle the soup into bowls, garnish with fresh parsley, and enjoy your hearty meal!
