1 lb Italian sausage (mild or spicy, your choice)

1 cup green or brown lentils, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 ribs celery, diced

1 red bell pepper, diced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 bay leaf

6 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes (with juices)

3 cups kale or spinach, roughly chopped

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Remove the sausage with a slotted spoon and set it aside.

    Sauté the Vegetables: In the same pot, add the diced onion, carrots, celery, and bell pepper. Sauté for about 5-6 minutes, until the vegetables are softened. Stir in the minced garlic, smoked paprika, and thyme, cooking for an additional minute until fragrant.

      Combine Ingredients: Return the browned sausage to the pot. Add the rinsed lentils, bay leaf, diced tomatoes (with juices), and broth. Stir well to combine all the ingredients.

        Simmer the Stew: Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 30-40 minutes, or until the lentils are tender. Stir occasionally to prevent sticking.

          Add Greens: Once the lentils are tender, stir in the chopped kale or spinach. Allow them to wilt, which should take about 5 minutes. Remove the bay leaf and season the stew with salt and pepper to taste.

            Serve: Ladle the stew into bowls and garnish with freshly chopped parsley, if desired. Enjoy with crusty bread or over rice for a complete meal!
