2 cups canned chickpeas, drained and rinsed

1 tablespoon olive oil

1 large onion, diced

3 cloves garlic, minced

1 carrot, diced

1 red bell pepper, diced

1 zucchini, diced

1 can (14 oz) diced tomatoes

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon paprika

½ teaspoon ground cinnamon

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

1 cup kale or spinach, chopped

¼ cup fresh cilantro or parsley, chopped (for garnish)

Juice of 1 lemon

Instructions
 

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.

    Add Vegetables: Add the diced carrot, red bell pepper, and zucchini to the pot. Cook for about 5-7 minutes until they begin to soften.

      Spice It Up: Sprinkle in the ground cumin, coriander, paprika, cinnamon, cayenne, salt, and black pepper. Stir well to coat the vegetables and cook for 1-2 minutes to allow the spices to bloom.

        Combine Ingredients: Pour in the diced tomatoes with their juices and the vegetable broth. Bring the mixture to a boil, then reduce heat to low and simmer for about 15 minutes.

          Add Chickpeas: Stir in the chickpeas and let the stew simmer for another 10-15 minutes until all vegetables are tender and flavors combined.

            Finish with Greens: Add the chopped kale or spinach to the pot and stir until wilted, about 2-3 minutes.

              Season and Serve: Adjust seasoning with additional salt and pepper if necessary. Stir in the lemon juice right before serving for brightness.
