Herb Crusted Pork Loin with Apples

1 (2-3 lb) pork loin

2 tablespoons olive oil

2 tablespoons Dijon mustard

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

4 medium apples (preferably Granny Smith or Honeycrisp), cored and quartered

1 cup chicken broth

1 tablespoon balsamic vinegar

Optional: 1 tablespoon brown sugar for sweetness

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Herb Mixture: In a small bowl, mix together the olive oil, Dijon mustard, minced garlic, rosemary, thyme, parsley, salt, and black pepper until well combined.

      Prepare the Pork Loin: Place the pork loin on a cutting board. Using a sharp knife, score the top of the pork loin in a crosshatch pattern, about 1/2 inch deep. This will help the herb mixture adhere better and infuse flavor.

        Apply the Herb Crust: Rub the herb mixture generously over the entire surface of the pork loin, making sure to get it into the scored lines for maximum flavor.

          Prepare the Apples: In a large ovenproof skillet or roasting pan, arrange the quartered apples around the pork loin. Drizzle with balsamic vinegar and sprinkle with brown sugar (if using) for added sweetness.

            Add Chicken Broth: Carefully pour the chicken broth into the bottom of the pan, ensuring it doesn’t wash away the seasoning on the pork.

              Roast the Pork Loin: Transfer the skillet or roasting pan to the preheated oven. Roast for approximately 45-60 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Baste the pork with the pan juices halfway through cooking for additional flavor.
