Ingredients

2 white fish fillets (such as cod or tilapia)

2 medium potatoes, thinly sliced

1 small red onion, thinly sliced

1 cup cherry tomatoes, halved

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F/190°C). Alternatively, you can preheat your oven to 400°F (200°C) if baking.

Prepare the Foil: Cut four large pieces of heavy-duty aluminum foil, each about 12x12 inches. This will be used to create individual packets for grilling or baking.

Prepare the Vegetables: In a large bowl, combine the thinly sliced potatoes, red onion, cherry tomatoes, and minced garlic. Drizzle with olive oil and lemon juice, then sprinkle with thyme, oregano, paprika, salt, and pepper. Toss everything together until the vegetables are well coated.

Assemble the Packs: Place an equal amount of the vegetable mixture in the center of each foil piece. Lay a fish fillet on top of the vegetables in each pack. Season the fish fillets with salt, pepper, and a sprinkle of additional thyme or oregano if desired.

Seal the Packs: Fold the sides of the foil over the fish and vegetables to create a tight seal. Make sure to leave some space inside the pack for steam to circulate while cooking.

Cook the Packs: Place the foil packs directly on the grill grates or on a baking sheet in the oven. Cook for about 15-20 minutes, or until the fish is flaky and the potatoes are tender. To check for doneness, carefully open a pack (watch for steam!) and test the potatoes with a fork.

Serve: Once cooked, remove the foil packs from the grill or oven. Carefully open the packs, garnish with fresh parsley, and serve with lemon wedges on the side for squeezing over the top.

Enjoy: Dig into this delicious herbed fish and potato foil pack. Perfect for a summer cookout or a quick weeknight dinner!
