Homemade Chicken Stroganoff

1 pound boneless, skinless chicken breasts, cut into thin strips

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (white or cremini)

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon paprika

1 cup chicken broth

1 cup sour cream

2 tablespoons all-purpose flour

2 tablespoons Worcestershire sauce

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

8 ounces egg noodles or pasta of choice

Instructions
 

Cook the Noodles: In a large pot, boil salted water and cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips, season with salt, pepper, and paprika, and sauté until lightly browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook Vegetables: In the same skillet, add the butter, onions, and garlic. Sauté for about 3 minutes until the onions become translucent. Add the mushrooms and continue cooking for another 5 minutes until they are golden and tender.

        Make the Sauce: Sprinkle the flour over the mushroom mixture and stir well to combine. Gradually pour in the chicken broth, stirring constantly to avoid lumps. Allow the mixture to simmer for about 5 minutes until it slightly thickens.

          Combine Ingredients: Lower the heat and add the Worcestershire sauce and sour cream. Return the cooked chicken to the skillet and stir well until everything is coated in the creamy sauce. Adjust seasoning with salt and pepper to taste.

            Serve: Spoon the chicken stroganoff over the cooked noodles and garnish with freshly chopped parsley.
