Ingredients

2 medium zucchinis

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

Fresh basil leaves for garnish

Salt and pepper to taste

Olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Zucchini: Wash the zucchinis thoroughly. Slice them into 1/2-inch thick rounds. If the zucchinis are large, you might want to cut them in half before slicing.

Season the Zucchini Slices: Place the zucchini rounds on a baking sheet lined with parchment paper. Drizzle with a little olive oil, and season with salt, pepper, garlic powder, and Italian seasoning. Toss to coat evenly.

Initial Bake: Bake the zucchini slices in the preheated oven for about 15 minutes, until they start to become tender.

Add Toppings: Remove the zucchini from the oven. Spoon a small amount of marinara sauce onto each round, spreading it slightly while leaving some of the zucchini exposed around the edges.

Cheese it Up: Sprinkle a generous amount of shredded mozzarella cheese on top of the marinara, followed by a sprinkle of grated Parmesan cheese. For an extra kick, add crushed red pepper flakes if you desire.

Final Bake: Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once out of the oven, let the zucchini pizzas cool for a couple of minutes. Garnish with fresh basil leaves before serving.

Enjoy: Serve warm as a delightful appetizer or a healthy snack!
