1 lb beef stew meat, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 cup pearl barley, rinsed

6 cups beef broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

1 cup diced tomatoes (canned or fresh)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large pot, heat the olive oil over medium-high heat. Add the beef cubes to the pot in batches, ensuring they are not crowded. Brown the meat on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

    Sauté Vegetables: In the same pot, add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes or until the vegetables are softened and the onions are translucent.

      Combine Ingredients: Return the browned beef to the pot. Stir in the rinsed pearl barley, beef broth, diced tomatoes, thyme, oregano, and bay leaf. Bring the mixture to a boil.

        Simmer the Soup: Reduce the heat to low, cover the pot, and let the soup simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked through. Stir occasionally and add more broth or water if the soup becomes too thick.
