Ingredients

2 pounds baby potatoes, halved

6 strips of bacon, chopped

1/4 cup honey

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C).

Prepare the bacon: In a large skillet over medium heat, cook the chopped bacon until it's crispy. Remove from the skillet and place on a paper towel to drain excess fat.

Mix the glaze: In a mixing bowl, combine the honey, olive oil, garlic powder, smoked paprika, salt, and pepper. Stir well to create a smooth mixture.

Combine potatoes and bacon: In a large mixing bowl, toss the halved baby potatoes with the crispy bacon and the honey mixture until evenly coated.

Roast the potatoes: Spread the coated potatoes and bacon evenly on a large baking sheet. Make sure they are in a single layer for even cooking.

Bake: Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and fork-tender, stirring halfway through for even caramelization.

Garnish and serve: Remove from the oven and let cool for a few minutes. Sprinkle freshly chopped parsley on top before serving for a burst of color and freshness.
