Ingredients

4 cups fresh corn kernels (from about 4-5 ears of corn) or 2 cans (15 oz each) of sweet corn, drained

1/4 cup unsalted butter

1/4 cup honey (preferably local or wildflower for added flavor)

1 teaspoon sea salt

1/4 teaspoon black pepper

1 tablespoon fresh lime juice (about 1/2 a lime)

2 tablespoons fresh chives or parsley, chopped (for garnish)

Optional: 1/4 teaspoon smoked paprika for a hint of smokiness

Instructions

Prepare the Corn: If using fresh corn, remove the kernels from the cobs using a sharp knife. If using canned corn, ensure that it is well-drained.

Heat the Skillet: In a large cast-iron skillet or non-stick pan, melt the butter over medium heat.

Add the Corn: Once the butter is melted and bubbly, add the corn kernels to the skillet. Stir well to coat the corn evenly in the butter.

Add Honey and Seasonings: Drizzle the honey over the corn, then sprinkle in the sea salt, black pepper, and, if using, smoked paprika. Stir to combine thoroughly so that the corn is well-coated with the honey butter mixture.

Cook the Corn: Sauté the corn for about 5-7 minutes, stirring occasionally. You want the corn to be heated through and lightly caramelized in places, which will enhance the sweetness.

Finish with Lime Juice: Once the corn is well cooked, remove it from heat and stir in the fresh lime juice to add a zesty brightness to the dish.

Garnish and Serve: Transfer the skillet corn to a serving dish or keep it in the skillet for a rustic presentation. Garnish with fresh chives or parsley. Serve warm as a delicious side dish that complements any meal!
