Ingredients

1 lb chicken tenders

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika (optional)

Salt and pepper to taste

1 cup breadcrumbs (Panko for extra crunch)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Marinade: In a medium bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika (if using), salt, and pepper until well combined.

Marinate the Chicken: In a large zip-top bag or shallow dish, add the chicken tenders and pour half of the honey mustard marinade over them. Seal the bag or cover the dish, and let the chicken marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with non-stick spray.

Prepare the Breading: In a shallow bowl, place the breadcrumbs. Remove the marinated chicken tenders from the refrigerator, allowing any excess marinade to drip off, and coat each tender in the breadcrumbs, pressing gently to adhere.

Bake the Chicken: Arrange the breaded chicken tenders on the prepared baking sheet in a single layer. Bake in the preheated oven for 15-20 minutes, or until the tenders are golden brown and cooked through (internal temperature should reach 165°F/75°C).

Serve: Once cooked, remove the chicken tenders from the oven. Drizzle the remaining honey mustard marinade over the top, or serve it on the side as a dipping sauce. Garnish with freshly chopped parsley and enjoy!
