Ingredients

1 lb chicken tenderloins

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 cup hot honey (store-bought or homemade)

Optional garnish: chopped fresh parsley

Instructions

Marinate the Chicken: In a bowl, combine the chicken tenderloins and buttermilk. Cover and refrigerate for at least 1 hour (or overnight for maximum flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

Prepare the Bread Crumb Mixture: In a large bowl, mix together the flour, cornmeal, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, black pepper, and dried thyme until well blended.

Coat the Chicken: Remove the chicken tenders from the buttermilk, allowing excess to drip off. Dredge each tenderloin in the breadcrumb mixture, pressing firmly to ensure a good coating. Arrange them on the prepared baking sheet.

Bake the Chicken: Bake in the preheated oven for 15-20 minutes, flipping halfway through, until the tenders are cooked through and golden brown (internal temperature should reach 165°F or 74°C).

Drizzle with Hot Honey: Once done, remove the chicken tenders from the oven and drizzle generously with hot honey while still warm.

Garnish and Serve: If desired, garnish with chopped fresh parsley for a burst of color. Serve with your favorite dipping sauces or alongside coleslaw or fries.
