Icy Hibiscus Pineapple Pops

2 cups fresh pineapple, chopped

1 cup dried hibiscus flowers

4 cups water, divided

1/4 cup honey or agave syrup (adjust to taste)

1 tablespoon lime juice

A pinch of salt

Optional: Fresh pineapple slices or mint leaves for garnish

Instructions
 

Prepare the Hibiscus Tea: In a pot, bring 2 cups of water to a boil. Add the dried hibiscus flowers and a pinch of salt. Reduce the heat and simmer for about 10 minutes. Afterward, remove from heat and allow it to steep for another 15 minutes.

    Strain the Tea: Using a fine mesh strainer, strain the hibiscus liquid into a bowl, discarding the flowers. Add the honey (or agave syrup) to the warm tea and stir until dissolved. Allow it to cool to room temperature.

      Blend the Pineapple: In a blender, combine the chopped pineapple, the remaining 2 cups of water, lime juice, and a pinch of salt. Blend until smooth and creamy. You may choose to strain this mixture if you prefer a smoother popsicle texture, but it's not necessary.

        Layer the Popsicles: In your ice pop molds, pour a layer of the hibiscus tea mixture until they are about 1/3 full. Place the molds in the freezer for about 30 minutes, or until the tea layer is partially frozen.

          Add the Pineapple Mixture: Carefully pour the pineapple mixture over the hibiscus layer, filling the molds almost to the top. If you want to add visual interest, you can create swirls by using a skewer to gently mix the two layers.

            Insert Sticks: If using traditional popsicle molds, insert the sticks into the molds now, or follow your mold's instructions.

              Freeze: Place the molds back in the freezer and freeze for at least 4-6 hours, or until completely solid.

                Serve: To release the pops, run warm water outside the molds for a few seconds. Gently pull the pops out and enjoy! Garnish with fresh pineapple slices or mint leaves for an extra touch of freshness.
