Ingredients

1 cup unsalted butter (melted)

1 cup brown sugar (packed)

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup butterscotch chips

1/2 cup chopped pecans (optional)

1/2 cup shredded coconut (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Mix the Wet Ingredients: In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until the mixture is well combined and though a bit grainy, it should look glossy.

Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring with a wooden spoon or spatula until just combined. Do not overmix; a few lumps are okay.

Add the Goodies: Gently fold in the butterscotch chips, and if using, the chopped pecans and shredded coconut. Ensure the mix is evenly distributed.

Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.

Cool and Cut: Once baked, remove from the oven and let it cool in the pan for about 10-15 minutes. Then, lift the bars out using the parchment paper (if used) and transfer them to a wire rack to cool completely before cutting into squares.

Serve and Enjoy: Serve these blissful bars warm or at room temperature. They can be stored in an airtight container for up to a week (if they last that long!).
