Ingredients

1 ½ cups rolled oats

½ cup natural peanut butter (smooth or crunchy)

⅓ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup dark chocolate chips (optional)

¼ cup chopped nuts (e.g., almonds or walnuts) (optional)

¼ cup dried fruit (e.g., raisins or cranberries) (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners for easy removal.

Mix Wet Ingredients: In a large bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until well combined and smooth.

Combine Dry Ingredients: In another bowl, mix the rolled oats, ground cinnamon, and salt until well distributed.

Combine Both Mixtures: Gradually add the dry oat mixture to the wet peanut butter mixture. Stir until all the oats are coated and the mixture is sticky. If desired, fold in the chocolate chips, chopped nuts, and dried fruit at this stage.

Form the Cups: Using a spoon or your hands, press about 2 tablespoons of the mixture into each muffin cup. Make sure to pack them tightly and create a small well in the center of each cup for extra filling later if desired.

Bake: Place the muffin tin in the preheated oven and bake for 12–15 minutes or until the edges are golden brown.

Cool Down: Remove the muffin tin from the oven and let it cool in the pan for about 5 minutes. After that, gently remove the oat cups and transfer them to a wire rack to cool completely.

Serve and Enjoy: Once cooled, you can enjoy the oat cups as is or fill the small wells with a bit more peanut butter or a dollop of your favorite jam for added flavor!
