12 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 red bell pepper, diced

1/2 cup black olives, sliced

1/2 cup red onion, thinly sliced

1 cup mozzarella balls (bocconcini), halved

1/4 cup fresh basil leaves, chopped

1/4 cup fresh parsley, chopped

1/2 cup Italian dressing (store-bought or homemade)

Salt and pepper to taste

Optional: grated Parmesan cheese for serving

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the tortellini is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, thinly slice the red onion, and slice the black olives.

      Combine Ingredients: In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red bell pepper, black olives, red onion, mozzarella balls, fresh basil, and parsley.

        Add Dressing: Pour the Italian dressing over the salad mixture and gently toss until all ingredients are well coated. Season with salt and pepper to taste.

          Chill and Serve: For best flavor, cover the salad and let it chill in the refrigerator for at least 30 minutes. Just before serving, give it a gentle toss again. Optionally, sprinkle grated Parmesan cheese on top for extra flavor.

            Enjoy! Serve chilled as a delightful side dish or a light main course. Garnish with additional fresh basil if desired.
