Ingredients

4 slices of sourdough bread

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

½ cup pickled jalapeños, chopped (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

2 tablespoons butter, softened

¼ cup breadcrumbs (optional, for crunch)

Salt and pepper to taste

Instructions

Prepare the Filling: In a medium-sized mixing bowl, combine the softened cream cheese, shredded cheddar, shredded Monterey Jack, chopped jalapeños, garlic powder, onion powder, salt, and pepper. Mix until fully combined and smooth.

Assemble the Sandwich: Spread a generous portion of the jalapeño cream cheese mixture onto two slices of sourdough bread. If you like extra crunch, sprinkle breadcrumbs evenly on top of the mixture. Cap with the remaining slices of bread to form two sandwiches.

Butter the Bread: Spread a thin layer of softened butter on the outer sides of each sandwich. This will help create a golden, crispy exterior.

Heat the Pan: Heat a non-stick skillet or griddle over medium heat. Once hot, place the sandwiches on the skillet.

Grill to Perfection: Cook the sandwiches for about 4-5 minutes on one side, or until they are golden brown. Carefully flip and cook for another 4-5 minutes on the other side, checking the cheese is melting and the bread is golden and crispy.

Melted Goodness: To ensure a perfectly melted interior, you can cover the skillet with a lid for the last minute of cooking, aiding the cheese to melt thoroughly.

Slice and Serve: Once done, remove the sandwiches from the skillet, allow them to rest for a minute, and then slice them in half. Serve warm, possibly with a side of ranch dressing or marinara for dipping.
