2 medium zucchinis, sliced into half-moons

1 tablespoon vegetable oil (or sesame oil for extra flavor)

1 tablespoon unsalted butter

2 cloves garlic, minced

1 small onion, thinly sliced

1 bell pepper (red or yellow), sliced

2 tablespoons soy sauce (low-sodium preferred)

1 tablespoon teriyaki sauce

1 teaspoon sesame seeds (for garnish)

Pinch of salt and black pepper, to taste

Optional: chopped green onions, for garnish

Prep the Veggies: Wash and slice the zucchinis into half-moons, cut the onion into thin slices, and slice the bell pepper into strips.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Make sure the oil is hot but not smoking.

      Cook the Aromatics: Add the butter, then the minced garlic and sliced onions to the pan. Sauté for about 1-2 minutes until the onions are translucent and fragrant.

        Add the Vegetables: Toss in the zucchini and bell pepper slices, stirring well to coat them with the oil and aromatics. Cook for about 5-7 minutes, often stirring, until the zucchini becomes slightly tender but still crisp.

          Season the Stir-Fry: Drizzle the soy sauce and teriyaki sauce over the vegetables. Stir well to combine, allowing the sauce to coat the vegetables evenly. Cook for another 2-3 minutes.

            Add Flavor: Season with salt and black pepper to taste. Give everything one final stir to ensure the seasoning is well distributed.

              Serve: Remove the pan from the heat. Transfer the stir-fried zucchini mixture to a serving dish. Garnish with sesame seeds and chopped green onions if desired.
