For the Mojo Marinade:

1 cup fresh orange juice

1/2 cup fresh lime juice

4 cloves garlic, minced

1/4 cup fresh cilantro, chopped

2 teaspoons cumin

1 teaspoon oregano

1 teaspoon red pepper flakes (optional for heat)

Salt and ground black pepper to taste

2 pounds pork shoulder (or pork butt), trimmed and cut into large chunks

For the Tacos:

12 small corn tortillas

2 cups diced pineapple

1 cup diced avocado

1/2 red onion, finely chopped

1 cup fresh cilantro leaves, for garnish

Lime wedges, for serving

Sliced jalapeños, for serving (optional)

Instructions
 

Marinate the Pork:

    - In a large bowl, combine the orange juice, lime juice, minced garlic, chopped cilantro, cumin, oregano, red pepper flakes, salt, and black pepper. Mix until well combined.

      - Add the pork chunks to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

        Cook the Pork:

          - Preheat your grill or smoker to medium-high heat (about 375°F/190°C).

            - Remove the pork from the marinade and let any excess drip off. Discard the marinade.

              - Grill the pork on all sides for about 15-20 minutes until nicely charred and cooked through, creating an internal temperature of at least 190°F (88°C) for tender results. You can also use a slow cooker on low for 8 hours if preferred.

                Shred the Pork:

                  - Once cooked, transfer the pork to a cutting board and allow it to rest for 10 minutes. Then shred the pork using two forks, mixing in any bits of crispy edges from the grill for extra flavor.

                    Prepare the Tacos:

                      - While the pork rests, grill the corn tortillas for about 30 seconds on each side until they are warm and slightly charred.

                        - Top each tortilla with a generous portion of the mojo pork, followed by diced pineapple, avocado, and red onion.

                          Garnish and Serve:

                            - Sprinkle fresh cilantro over the top and add sliced jalapeños if desired. Serve with lime wedges on the side for an extra citrus kick.
