Juicy Pineapple Teriyaki Meatballs

1 pound ground beef (or ground turkey)

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped green onions

1/4 cup pineapple juice (from canned pineapple)

1 large egg

2 cloves garlic, minced

1 tablespoon soy sauce

1 teaspoon ground ginger

1 teaspoon salt

1/2 teaspoon black pepper

1 cup teriyaki sauce

1 cup crushed pineapple (drained if canned)

Sesame seeds and extra green onions for garnish

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped green onions, pineapple juice, egg, minced garlic, soy sauce, ground ginger, salt, and black pepper.

      Mix until well combined but do not overmix; this helps keep the meatballs tender.

        Shape the mixture into 1.5-inch meatballs and place them on the prepared baking sheet, leaving space between each meatball.

          Bake in the preheated oven for about 20-25 minutes, or until the meatballs are browned and cooked through (internal temperature should reach 160°F/70°C).

            While the meatballs are baking, prepare the teriyaki sauce: in a small saucepan, combine the teriyaki sauce and crushed pineapple. Heat over medium heat until warmed through and slightly thickened, about 5-7 minutes.

              Once the meatballs are cooked, transfer them to a large bowl and pour the warm teriyaki sauce over the meatballs. Gently toss to coat all meatballs evenly.

                Serve hot, garnished with sesame seeds and additional chopped green onions. These meatballs can be served over rice, in a pineapple boat, or as an appetizer on their own. Enjoy!
