1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

½ teaspoon salt

1 cup key lime juice (freshly squeezed is best)

1 can (14 oz) sweetened condensed milk

3 large egg yolks

Zest of 2 key limes

¼ teaspoon salt

For the topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

Fresh key lime slices or zest (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Make the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and salt. Mix until well combined and has a wet sand-like texture. Press the mixture evenly into the bottom of an 8x8 inch baking dish. Bake for 10 minutes, then remove from the oven and allow to cool slightly.

      Prepare the Filling: In a mixing bowl, whisk together the key lime juice, sweetened condensed milk, egg yolks, lime zest, and salt until smooth and fully combined.

        Combine the Layers: Pour the lime filling over the cooled graham cracker crust evenly, smoothing out the top with a spatula.

          Bake the Bars: Return the dish to the oven and bake for 15-20 minutes, or until the filling is set but still slightly jiggly in the center. Remove from the oven and cool to room temperature. Once cooled, refrigerate for at least 2 hours to fully set.
