1 medium sweet potato, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 cup shredded cheese (cheddar or Monterey Jack)

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

4 large flour tortillas

1 tablespoon olive oil or cooking spray

Optional toppings: sour cream, salsa, avocado, chopped cilantro

Instructions
 

Cook the Sweet Potato: In a medium pot, bring water to a boil. Add the diced sweet potato and cook for 10-12 minutes, or until tender. Drain and let cool slightly.

    Mash the Sweet Potato: In a mixing bowl, mash the cooked sweet potato with a fork until smooth, then stir in the black beans, cumin, chili powder, salt, and pepper until well combined.

      Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Spread about 1/4 of the sweet potato and black bean mixture onto half of the tortilla, then sprinkle cheese on top. Fold the tortilla in half to cover the filling. Repeat with remaining tortillas.

        Cook the Quesadillas: Heat olive oil or cooking spray in a large skillet over medium heat. Once hot, carefully place one quesadilla in the skillet and cook for about 3-4 minutes per side, or until golden brown and the cheese is melted. Remove from skillet and keep warm. Repeat with remaining quesadillas.

          Serve: Cut each quesadilla into wedges and serve warm with optional toppings like sour cream, salsa, avocado, or cilantro. Enjoy!
