2 cups cooked and cooled jasmine rice (preferably a day old)

1 cup mixed vegetables (carrots, peas, corn – fresh or frozen)

1/2 cup bell peppers, diced (red, yellow, or green)

2 green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon sesame oil (or vegetable oil)

1 egg (optional, for added protein)

1 teaspoon ginger, grated (optional)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prep the Ingredients: If you’re using fresh vegetables, chop them into tiny, kid-friendly pieces to make them easy to eat. If using frozen, there's no need to defrost!

    Heat the Oil: In a large skillet or wok, heat the sesame oil over medium-high heat. Ensure the pan is hot enough so the vegetables stir-fry rather than steam.

      Stir-fry the Vegetables: Add the garlic and ginger (if using) to the hot oil and sauté for about 30 seconds until fragrant. Then, add the mixed vegetables and bell peppers. Stir-fry for about 3-4 minutes until they are tender but still vibrant in color.

        Add the Rice: Break up any clumps in the cooked rice before adding it to the pan. Stir in the rice and combine it well with the vegetables.

          Season the Rice: Drizzle the soy sauce over the rice and mix thoroughly to ensure even distribution. Season with salt and pepper to taste.

            Add the Egg (Optional): If using, make a space in the center of the fried rice and crack the egg into that space. Stir quickly to scramble the egg and mix it into the rice once it's fully cooked.

              Finish with Green Onions: Add the chopped green onions and stir everything together for another minute. Remove from heat.
