1/4 cup soy sauce

2 tablespoons brown sugar

2 tablespoons sesame oil

2 tablespoons rice vinegar

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon gochujang (Korean red chili paste)

1 teaspoon black pepper

1 teaspoon sesame seeds

2 green onions, finely chopped

For the Skewers:

1.5 pounds sirloin steak, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

1 small red onion, cut into wedges

1 tablespoon vegetable oil for grilling

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated ginger, gochujang, black pepper, sesame seeds, and chopped green onions until well combined.

    Marinate the Beef: Place the cubed sirloin steak in a resealable plastic bag or a shallow dish. Pour the marinade over the beef, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Assemble the Skewers: Remove the beef from the marinade (keep the marinade for grilling) and thread the beef cubes onto the skewers, alternating with pieces of red and yellow bell peppers and onion wedges.

        Preheat the Grill: Heat your grill to medium-high heat (about 400°F or 200°C). Lightly brush the grill grates with vegetable oil to prevent sticking.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally, until the beef is cooked to your desired level of doneness (medium-rare is suggested around 135°F or 57°C).

            Baste with Marinade: During the last few minutes of grilling, brush the skewers with the reserved marinade to enhance the flavor and keep the beef juicy.

              Serve: Once grilled to perfection, remove the skewers from the grill and let them rest for a few moments. Serve hot, garnished with additional sesame seeds and chopped green onions if desired.
