1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup salsa (your choice of mild, medium, or spicy)

2 cups cooked shredded chicken (can use rotisserie chicken for convenience)

1 cup shredded cheese (Mexican blend or cheddar)

8 large flour tortillas

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon salt

½ teaspoon pepper

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Mix the Filling: In a large mixing bowl, combine the black beans, corn, salsa, shredded chicken, cumin, chili powder, garlic powder, salt, and pepper. Stir until well mixed.

      Prepare the Tortillas: Take a tortilla and place about ½ cup of the filling mixture in the center. Sprinkle a tablespoon of shredded cheese on top, then roll the tortilla tightly to enclose the filling.

        Arrange in Baking Dish: Place the rolled tortillas seam-side down in a greased 9x13 inch baking dish. Repeat the rolling process for all tortillas.

          Top with Sauce and Cheese: Once all tortillas are in the baking dish, pour any remaining salsa over the top, ensuring they are well-coated. Sprinkle the remaining grated cheese evenly over the salsa.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

              Serve: Remove from the oven and let cool for a couple of minutes. Garnish with fresh cilantro or sliced green onions if desired. Serve hot with sour cream or guacamole on the side.
