Lemon Blueberry Muffin Bites

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon lemon zest (freshly grated)

1 large egg

1/4 cup buttermilk (or milk with a splash of vinegar)

1/4 cup unsalted butter, melted and cooled

1 teaspoon vanilla extract

1 cup fresh blueberries (or frozen, thawed)

Additional lemon zest for garnish (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line it with mini cupcake liners.

    Combine Dry Ingredients: In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and lemon zest until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Be careful not to overmix; the batter should be lumpy.

          Fold in Blueberries: Gently fold the blueberries into the batter, ensuring they are evenly distributed.

            Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.

                Cool & Serve: Allow the muffin bites to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. If desired, dust with powdered sugar and add additional lemon zest before serving.
