Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk (room temperature)

3 large eggs

1 tablespoon lemon zest (freshly grated)

1/4 cup fresh lemon juice

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon vanilla extract

For the Lemon Glaze:

1 ½ cups powdered sugar

4 tablespoons fresh lemon juice

1 teaspoon lemon zest

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream butter and sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-5 minutes). This helps incorporate air into the mixture for a fluffier cake.

Incorporate eggs: Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.

Add wet ingredients: Mix in the lemon zest, lemon juice, buttermilk, and vanilla extract until well combined.

Combine wet and dry ingredients: Gradually add the dry flour mixture to the wet ingredients. Mix on low speed until just combined, being careful not to overmix. The batter should be smooth but still thick.

Bake the cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool the cakes: Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, turn them out onto a wire rack to cool completely.

Prepare the lemon glaze: In a small bowl, whisk together the powdered sugar, fresh lemon juice, and lemon zest until smooth. Adjust the consistency with more sugar or juice as needed.

Frost the cake: Once the cakes are completely cooled, place one layer on a serving plate and drizzle with a portion of the lemon glaze. Top with the second layer and pour the remaining glaze over the top, letting it drip down the sides.

Serve and enjoy: Slice and serve your zesty lemon delight cake, and enjoy the refreshing and vibrant flavors!
