Lemon Coconut Energy Balls

Ingredients
  

1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/2 cup almond butter (or nut butter of choice)

1/4 cup honey or maple syrup

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: 1/4 cup chopped nuts or seeds (like almonds or pumpkin seeds) for added crunch

Instructions
 

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, and sea salt. If you’re adding nuts or seeds, toss them in now as well.

    Add Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract until smooth and combined.

      Mix Together: Pour the wet mixture into the dry ingredients. Use a spatula or your hands to combine everything thoroughly until it forms a sticky mixture. If it’s too dry, add a splash of water or more honey.

        Form Balls: Once the mixture is well combined, take small portions of it and roll them into balls, about 1 inch in diameter. Place each ball on a parchment-lined baking sheet.

          Chill: Refrigerate the energy balls for at least 30 minutes to allow them to firm up.

            Serve & Store: Enjoy them straight from the fridge, and store any leftovers in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
