2 large cucumbers

1 cup cream cheese, softened

2 tablespoons fresh lemon juice

1 tablespoon lemon zest

2 tablespoons fresh dill, chopped (plus extra for garnish)

1 teaspoon garlic powder

¼ teaspoon salt

¼ teaspoon black pepper

Cherry tomatoes, halved (for garnish)

Instructions
 

Start by washing the cucumbers thoroughly. Cut off the ends, then slice them into ½-inch thick rounds. Pat the cucumber slices dry with a paper towel to remove excess moisture.

    In a mixing bowl, combine the softened cream cheese, fresh lemon juice, lemon zest, chopped dill, garlic powder, salt, and black pepper. Mix well until the ingredients are fully incorporated and smooth.

      Using a piping bag or a zip-top bag with a corner snipped off, fill it with the lemon dill cream cheese mixture. Pipe a generous dollop of the mixture onto each cucumber slice.

        For an attractive presentation, top each cream cheese-filled cucumber bite with a half cherry tomato and a sprinkle of additional dill for garnish.

          Arrange the cucumber bites on a serving platter and chill in the refrigerator for about 15 minutes before serving to allow the flavors to meld.
