Lemon Garlic Roasted Chickpeas

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

Zest of 1 lemon

2 tablespoons lemon juice

3 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel or paper towels. Pat them dry to remove excess moisture. Removing moisture will help them get crispy.

      Mix Dressing: In a large mixing bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, smoked paprika, ground cumin, salt, and black pepper. Whisk together until well combined.

        Coat the Chickpeas: Add the dried chickpeas to the bowl with the dressing. Toss until the chickpeas are evenly coated with the mixture.

          Spread and Roast: Spread the coated chickpeas in a single layer on the prepared baking sheet. Make sure there’s space between each chickpea for even roasting.

            Roast: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the chickpeas are golden brown and crispy. Stir them halfway through to ensure they cook evenly.

              Cool and Serve: Once roasted, remove the chickpeas from the oven and let them cool slightly. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
