12 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup olive oil

1/4 cup white wine (optional)

Zest and juice of 1 large lemon

1/2 tsp red pepper flakes (adjust to taste)

Salt and freshly ground black pepper to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant but not browned.

      Add White Wine: If using, pour in the white wine and let it simmer for about 2-3 minutes until slightly reduced.

        Cook the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on one side until just pink, then flip and cook for another 2-3 minutes until fully cooked and opaque.

          Combine Flavors: Lower the heat and add the cooked pasta to the skillet. Pour in the lemon juice and zest, tossing everything together. If the mixture seems dry, add reserved pasta water, a little at a time, until you reach your desired consistency.

            Garnish and Serve: Stir in freshly chopped parsley and adjust seasoning if needed. Serve hot, topped with grated Parmesan cheese and accompanied by lemon wedges on the side.
