Lemon Ricotta Pasta with Arugula

250g spaghetti or your favorite pasta

1 cup ricotta cheese

Zest and juice of 1 large lemon

2 tablespoons olive oil

2 cloves garlic, minced

1 cup fresh arugula, roughly chopped

1/4 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1/2 cup grated Parmesan cheese

Extra lemon wedges and Parmesan for serving

Cook the Pasta: Bring a large pot of salted water to boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Ricotta Mixture: In a large bowl, combine the ricotta cheese, lemon zest, lemon juice, olive oil, and minced garlic. Mix until smooth and well combined. If the mixture is too thick, you can add a bit of the reserved pasta water to reach your desired consistency.

      Combine Pasta and Ricotta: Add the drained pasta to the ricotta mixture. Toss well to coat the pasta evenly. If the mixture is too thick, gradually add more of the reserved pasta water until you achieve a creamy consistency.

        Add Arugula and Season: Fold in the chopped arugula and sprinkle with red pepper flakes, if using. Season with salt and freshly ground black pepper to taste. Toss everything together until the arugula wilts slightly.
