Lemon Rosemary Chicken & Potato Sheet Pan

Ingredients
  

4 bone-in, skin-on chicken thighs

1 ½ lbs baby potatoes, halved

4 tablespoons olive oil

2 lemons (juice and zest of one, and slices of the other)

4 garlic cloves, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Marinade: In a small bowl, whisk together 3 tablespoons of olive oil, the juice and zest of one lemon, minced garlic, chopped rosemary, thyme, salt, and pepper.

      Marinate Chicken: Place the chicken thighs in a large bowl or zip-top bag. Pour the marinade over the chicken, ensuring it’s well coated. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).

        Prepare Potatoes: In another bowl, toss the halved baby potatoes with the remaining tablespoon of olive oil, salt, pepper, and half of the lemon slices.

          Assemble the Sheet Pan: On a large sheet pan, arrange the marinated chicken thighs skin-side up. Surround them with the seasoned baby potatoes and scatter the remaining lemon slices over everything.

            Bake: Place the sheet pan in the preheated oven and bake for 35-40 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C), and the potatoes are golden and fork-tender.

              Broil (Optional): For an extra crispy skin, switch the oven to broil for the last 2-3 minutes of cooking. Keep a close eye to avoid burning.

                Serve: Remove from the oven, let it rest for a few minutes, and then garnish with fresh parsley if desired. Serve warm and enjoy the aromatic flavors!
