1 cup white chocolate chips

1/2 cup heavy cream

Zest of 2 large lemons

1/4 cup freshly squeezed lemon juice

1/2 teaspoon vanilla extract

1 cup crushed graham crackers (for coating)

1/4 cup powdered sugar (for coating)

Extra lemon zest (for garnish, optional)

Instructions
 

Melt the Chocolate: In a small saucepan over low heat, combine the white chocolate chips and heavy cream. Stir continuously until the mixture is smooth and the chocolate is fully melted.

    Add Flavor: Remove from heat and stir in the lemon zest, lemon juice, and vanilla extract. Mix until everything is fully incorporated.

      Chill the Mixture: Allow the mixture to cool at room temperature for about 10 minutes. Then, cover it with plastic wrap and refrigerate for 1-2 hours or until it’s firm enough to scoop.

        Form the Truffles: Once the mixture is chilled, use a melon baller or small cookie scoop to portion out the mixture. Roll each spoonful between your palms to form a ball.

          Coat the Truffles: In a shallow bowl, combine the crushed graham crackers and powdered sugar. Roll each truffle in the mixture until well coated.
